Soba Dojo with Master Yoshi Yamazaki: A Unique Opportunity in Barcelona
In Nagano, the Japanese region where soba as we know it today was born, very few masters have been making it by hand for as long as Yoshi Yamazaki. Fifth-generation owner of the historic ryokan Tamanoyu, in the Asama Onsen hot spring area, Yamazaki has been kneading, stretching, and cutting soba every morning and evening for his guests for forty years.
Now, for the first time, he brings that tradition to Barcelona.
This is a rare opportunity: Japanese cuisine is booming in Spain, but soba, one of its oldest and healthiest dishes, remains practically unknown outside of Japan. Learning it directly from a master with decades of experience, in Barcelona and not in Nagano, is a unique proposition.
Yamazaki will be accompanied by Arnou Isanta, chef and owner of Ryokan Sushi in Tremp, trained directly by him to continue his legacy and dedicated to training new soba artisans in Spain.
There are two ways to participate in the activity:
- Experience Plan: Learn the complete process, from kneading the flour to cutting the noodles, guided step-by-step by Master Yamazaki.
- Observation Plan: Closely follow the master’s technique and focus on tasting, ideal for those who prefer to observe without making soba.
Both plans include a tasting of different types of soba (juwari, nihachi, and European flour soba) along with Matsumoto-style special karaage, plus a moment for meeting and conversation at the end of the session.
- Activity suitable for ages 15 and up, no prior experience necessary.
- Some dishes contain allergens (buckwheat, gluten, and animal products).
- The activity will be conducted in Spanish and Catalan, with Japanese support.
